Artisan Gelato Masterclass

Artisan gelato isn’t just ingredients: it’s chemistry, temperature and balance. In this masterclass I explain the basics of balancing — sugars, fats, air — and the differences between gelato and sorbet. Then we get our hands dirty, or rather, into the gelato machine.
Together we make at least three flavors: egg custard, dark chocolate and a seasonal flavor that changes with the time of year. At the end we taste everything, compare the textures and work out what works and why. A class that will change the way you eat gelato.

Roberta’s gelato-making class was the absolute highlight of our trip to Bologna! Roberta is a joyful, kind person with a passion for food and gelato! Her home is stunning and we felt like special guests as well as students. We learned every step of the process and then ate the gelato, which was incredibly delicious! We sat in her bright kitchen eating the best gelato ever, along with sorbets, wine and fresh strawberries, finishing with affogato. Roberta is an expert chef and we would happily take any of her classes. We rate her class as highly as possible!
Roberta was a fantastic host! She was very patient with my 2 little girls. The gelato was delicious and the whole process was easy to understand. She had fresh fruit, a delicious sparkling wine and refreshments ready for us. I highly recommend booking a class with Roberta!
