Filled Pasta: Balanzoni and Tortelloni

Filled pasta takes skill, patience and a little poetry. The sheet must be thin but not too thin, the filling generous but not excessive, the sealing precise. It’s an art you learn with your hands, not your eyes.
In this class we make balanzoni — the big green ravioli typical of Bologna — and tortelloni with ricotta, spinach and nutmeg. We’ll leave the kitchen tired and happy, just as it should be.

Ciao Roberta, I wanted to thank you so much for the wonderful evening yesterday! We had a really great time. Thank you from the bottom of our hearts for hosting us and above all for sharing your kitchen secrets: learning to make green pasta, yellow pasta, tortellini and tortelloni was fantastic. We can’t wait to put ourselves to the test and make them again at home! A big hug.
Roberta was fantastic! We had a beautiful experience cooking two kinds of tortelloni and tiramisù. Soooo good!! Thank you so much for opening your beautiful home and kitchen, Roberta!!
She is a super welcoming and kind person. With her I made tagliatelle, tortelloni and tiramisù, all excellent and plentiful! We chatted a lot, she answered all my questions, guided me in rolling out the pasta sheet and gave me some precious cooking tips.
Highly recommended!
Roberta was AMAZING and is a fantastic teacher! She showed us how to make tagliatelle and tortelloni with a spinach and ricotta filling. She made us a delicious piadina platter as an aperitivo, absolutely exquisite. We had lovely conversations about Italy, travel, cooking and family. At the end of the experience she shared some of her homemade gelato, which was divine! When we left her home, we were so full! I highly recommend taking any cooking class with her, you won’t be disappointed.
We had a great time with Roberta. Not only did she show us how to make excellent tortelloni and tagliatelle, but also how to make a delicious tomato and meat sauce. The wine was exquisite too and her home is beautiful. Thank you for this wonderful morning and afternoon!
We had a great time at the class and with Roberta. She is a kind host and a patient teacher. Her passion for pasta and regional desserts is contagious. She taught us how to make tortelloni, tagliatelle and tiramisù in simple steps. We’re sure we can replicate these dishes at home. We highly recommend this class!
Roberta and her cooking class were fantastic! We made ravioli, tortelloni and tiramisù. Roberta was very knowledgeable, kind, patient and truly enthusiastic about teaching how to make pasta! Her kitchen was fantastic, everything was ready and organized so we could start right away. It was wonderful to take the class in her beautiful kitchen and enjoy the lunch we made together in her lovely dining room. She was very friendly, present and helpful with instructions and methods.
I highly recommend her, 5+*****
Roberta was very welcoming! Her home and the setting of the cooking class were very beautiful. Everything was prepared in her kitchen, a real dream for anyone who loves to cook! My daughter (14), my aunt and I had a lot of fun learning to make tortelloni, ravioli and tiramisù. Roberta spoke excellent English and was easy to follow during the preparation. We took an active part in every stage, from the pasta to the filling, right through to all the ingredients for the dessert. The food was simple but incredibly flavorful! We really enjoyed the experience and highly recommend Roberta’s class to anyone interested in traditional Italian pasta!
We loved our morning with Roberta. She is very welcoming and kind. She really knows how to cook and how to teach others. Her kitchen is beautiful. We made two different kinds of tortelloni, both absolutely delicious. It was a very relaxing break during our trip. Even though we only spent a morning together, it felt like leaving a dear friend, and it was hard to go!
We had an incredible experience with Roberta, a memory we will treasure forever. From the moment we walked into her warm, welcoming kitchen, we felt at home.
Roberta patiently guided us as we learned to make traditional Italian dishes like tortelloni, ravioli, tagliatelle and classic tiramisù, all from scratch. Her passion for cooking and her love of culinary traditions shone through in every step of the process.
Her expertise and attention to detail, combined with her warmth and generosity, made the experience truly unforgettable. Not only did we learn techniques and recipes, and the dishes we enjoyed were exquisite, but we also gained a deep understanding of the heart of Italian culture.
We can’t thank Roberta enough for opening her home to us and sharing her precious tips and culinary traditions. It was much more than a cooking class: it was a heartfelt connection with the traditions and flavors of Italy. Highly recommended to anyone looking for an authentic, hands-on culinary adventure!
Our family had a fantastic experience at Roberta’s cooking class in Bologna earlier this month. Roberta was incredible: extremely patient and very knowledgeable, sharing a wealth of local and culinary information during the class. We specifically asked for a vegetarian option and were thrilled to cook tortelloni and tiramisù. Our daughters, aged 6 and 8, who are rather picky eaters, loved the whole experience. Watching them get involved in the cooking and enjoy the delicious results was truly the highlight of our trip to Italy. We highly recommend this cooking class to anyone looking for an authentic and enjoyable culinary experience in a super welcoming home setting.
This cooking class is one of the most incredible travel experiences I have ever had, and Roberta made it even more memorable. Roberta has a beautiful apartment and a breathtaking kitchen with all the professional tools needed to create a little Italian culinary magic.
When my teenage daughter and I arrived, she had prepared some delicious nibbles for us, including pappa al pomodoro, which is now our favorite Italian starter. We had a great time making the main meal, which included tortellini (with Parmigiano cream), tortelloni (Bolognese) and one of the best tiramisù we have ever eaten (and we’ve eaten a lot!). The end result was simply delicious and was served at the table with a refreshing Pignoletto. Roberta even offered us some gelato she had made earlier, which was simply divine.
I would highly recommend Roberta to anyone interested in cooking authentic Italian dishes like a professional. Roberta deserves all five stars!
